Lobster Rillettes Club Sandwich

Elaborate starter - Preparation 15 min

For 4 persons :

6 slices of soft bread - 100 g of Groix & Nature Lobster Rillettes - 1 yellow sweet pepper - 1 red sweet pepper - 1 aubergine

1 courgette - Baby spinach - Thyme - Garlic - Cherry tomatoes - Chives - Green asparagus.

1 - Cut the bread into a rectangle, wash and cut the vegetables into slices of the same size as the bread.

2 - Fry the vegetables in olive oil, thyme and garlic clove (peppers together and courgettes and aubergine together). Meanwhile, toast the bread.

3 - Cut the green asparagus into slice and blanch them in boiling water for 2 minutes, then cool them in iced water.

4 - Add a spoonful of Groix & Nature Lobster Rillettes and make the club by playing on the harmony of the colours.

5 - Enjoy with some young shoots, asparagus and some cherry tomatoes.
